I wanted to do a piece depicting what I consider to be our "real" national flower--the dandelion. My research revealed many interesting facts about this species. I remember eating it as a vegetable, much like spinach, when I was a child growing up in rural Saskatchewan. I found out it has been used for medicianl purposes, and has been the subject matter of some pretty interesting myths. So, although to many of us it is a pesky weed in our lawns and garden, it can also be useful, and was actually imported into this country by the early settlers as a food source. Beauty is in the eye of the beholder!
